This weekend I made pasta for almost the first time- the last time was over 20 years ago and it was not noodles so OK- first time! The recipe is super easy and the results so worth it, I recommend you give it a shot. Here then is home-made noodles- 2 cups unbleached organic flour - 'cause you are going thru the trouble, why use garbage? Mix in a bowl the flour, sifted. In separate bowl or cup, mix two large eggs, 3 tbs water- u may need more later, and 1/4 tbs olive oil. Once you have mixed, form into a ball and dump on floured counter - that of course you super cleaned first! Roll out til relatively thin- not too thin so it won't break but not so thick that it will be chewy and rubbery when cooked- this could take some practice- remember it well absorb water in the boil too. I used a pizza cutter to trim the ends, the cut-offs get added back to the dough and will be rolled out again. Here it is rolled up to make cutting easier. I had thought the pizza cutter would work to cut the individual noodles, but a knife was easier in the end. After separating the noodles, I hung them on clean hangers to air dry a few hours- so they wouldn't fall apart in the water later.
